Cuban Party Food
While the specific roots of Cuban cuisine are unclear, it is clear that it has some Spanish and African influences due to the country's history of colonization and of slave trade. Cuban food is known by most foreigners as being very tasteful and unfortunately as being difficult to cook.
The secret to a Cuban and easy-to-make dish is a basic combination of garlic, onions, and peppers. Most if not all typical Cuban dishes begin with this combination which is commonly referred to as a "sofrito " - much like French cooking begins with a mirepoix of carrots, onions and celery. You begin by mincing or grinding these three ingredients and adding them to a pan with oil to cook for a little while. Whether you add anything else to this mix depends on what you are cooking.
